SOFT SHELL CRABS WITH TOASTED PECANS

Recipe:

Amount Ingredient
4 Cleaned Soft Shell Crabs
1 Cup Milk
2 Cups Flour
To Taste Salt And Pepper
1/4 Cup Canola Oil
2 TBS. Clarified Butter
2 TBS. Toasted Pecans

Lime Wedges

2 TBS. Parsley, Chopped


Cooking instructions:

Toast pecans lightly coating with olive oil and bake at 400-degrees for 5 minutes. Meanwhile, soak crabs in milk. Heat oil in skilled to medium hot. Coat crabs in flour. Saute until golden brown on both sides. (Use care, the crabs will "pop" while cooking due to moisture in the crabs.) Drain crabs on paper towel. Place on a warm plate while still warm. Squeeze juice of lime over crabs, drizzle with hot butter and top with parsley and pecan pieces.
