ROASTED ALMONDS

Recipe:

Amount Ingredient
2 Cups Unbleached Shelled Almonds
2 TSP. Almond Oil or Very Light -Flavored Virgin Olive Oil
1/2 TSP. Sea Salt or More To Taste



Cooking instructions:


Preheat the oven to 300-degrees. Bring a large pot of water to a boil, plunge almonds in, and boil rapidly for about 1 minute. Turn the almonds into a colander, and as soon as you can handle them but before they are really cool, slip the skins off. If any skins don't come off easily, return those nuts briefly to the boiling water. Spread the skinned nuts in a baking dish large enough to hold them in a single layer. Bake for 5 minutes to dry them out. Remove from the oven and stir in oil and salt. Return to the oven for another 15 minutes, stirring occasionally with a wooden spoon, until the almonds are a pale, golden brown. During the last few minutes, check frequently to make sure they're not getting too brown. Set aside for a few hours before serving. Makes 2 cups, or about 8 servings.
