BUFFALO STEAK DIANE

 

Amount Ingredient
12-2 OZ. Buffalo Tenderloin Medallions, Lightly Pounded With A Meat Mallet
1/4 Cup Chopped, Fresh Chives
1/2 Cup Brandy
1/3 Cup Cold Butter, Diced
To Taste Salt and Fresh Ground Pepper
1 TBS. Canola Oil


Cooking instructions:

Heat skillet to medium high, add oil and saute buffalo to desired doneness. Drain off excess juices from pan, flame with brandy, adding slowly. Beware of flame. Season with salt, pepper and chives. Take skillet off flame, add cold butter and stir until slightly thickened.
